Chef Ciro Sorrentino– Expert Pizzaiolo at La Piazza, Hyatt Regency, Delhi
A pioneer in the authentic Italian cuisine in Delhi, La Piazza, one of the first Italian trattoria-style restaurants brings in a Pizzaiolo (a pizza chef) for the first time ever in India. Chef Ciro Sorrentino, an expert Pizza Chef will bring in a variety of new pizzas at Hyatt Regency Delhi during a limited period promotion at the 22 year old restaurant La Piazza. Realizing his love for making pizzas at an early age, Chef Ciro started at young age of 13 to convert his passion into profession. Having worked with famous international restaurants and pizzerias, he brings with him a rich experience from across the world. Chef Ciro is a trained pizzaiolo with expert knowledge in different kinds of pizza dough including Neapolitan S.T.G, Romana, Gluten Free, Poolisch; Biga and Long Processing Dough Fermentation.
In our tete-a-tete with the chef, we learnt that he likes to rest the pizza doughs for over 48 hours, and uses more than usual amounts of water to prepare the dough, lending his pizzas the kind of fluffiness that we only see in sponge cakes. The pizzas that you see below may look like regular ‘thick base’ pizzas, but you have to try these for yourself to know what we are talking about. The pizza bases literally melted in our mouth, and even after a few slices of the pizza, our stomachs were not feeling what you feel after a thick pizza. You know what we mean, right?
We tried the Burratta pizza (minus the parma ham, though) and the Funghi (mushroom) pizzas, and cannot pick just one favorite. The beauty of these pizzas lies in the soft, super spongy base and the choicest of fresh ingredients. Even the tomato sauce on the pizzas had a very unique, fresh flavor, which we learnt is because the Pizzaiolo uses tomatoes from Italy!
